Vegan “Chicken” Pot Pie: An Easy & Comforting Recipe

This vegan chicken pot pie recipe offers a healthy vegan twist on a comfort food classic. Whether you’re wanting to cook for meat-eaters or you’re a new (or seasoned) vegan who’s missing a holiday favorite. Our vegan chicken pot pie is ready in about an hour and will satisfy any type of eater.  

Vegan Chicken Pot Pie Recipe

Ingredients 

  • 8-10 oyster mushrooms
  • 1 tbsp. of soy sauce
  • 3 tbsp. vegan butter
  • 2 carrots, diced
  • 1 yellow onion, diced
  • 2 cups of chickpea flour 
  • 1/2 cup green peas, fresh or frozen
  • 1 celery ribs, diced
  • 2 cloves garlic, minced
  • 2 cups vegetable broth 
  • 1/2 cup oat milk
  • 1/4 tsp. thyme
  • 1/8 tsp. oregano 
  • 1/4 tsp. black pepper
  • 1/2 tsp. salt 
  • 2 sheets vegan puff pastry, thawed

Step 1: Prepare the Mushrooms

  1. Clean oyster mushrooms with a wet cloth to remove any residue. 
  2. Slice the tip of the base of each oyster mushroom and discard (about 1 inch).
  3. With a fork, shred the oyster mushrooms by laying the mushrooms down and dragging the fork through the meat of the mushroom. 
  4. Mix the shredded mushroom with soy sauce in a medium bowl and set aside. 

Step 2: Sauté Veggies

  1. Melt the vegan butter in a large pan over medium-low heat. Then add the onion, carrots, celery, and garlic. 
  2. Cook until tender (about 5 minutes). 
  3. Add in chickpea flour and stir until well combined. Cook for another 3 minutes. 
  4. Add the broth, thyme and oregano and stir in the oat milk, pepper, and sea salt. Bring the mixture to a simmer.
  5. Stir in the mushrooms and reduce the heat to low. Cook the filling for 10 minutes or until the liquid has reduced to a gravy consistency. Remove from the heat, stir in the peas and set aside while you prepare the puff pastry for the vegan chicken pot pie.

Step 3: Prepare Vegan Pot Pie

  1. Preheat over to 420 degrees Fahrenheit. 
  2. Place the pie pan upside down on the thawed pastry sheet and cut a circle an inch larger than the dish lip. 
  3. Fill the pie pan with the pie filling. 
  4. Cover the mixture with a pastry sheet. 
  5. Press the edges of the pastry to the side of the vegan chicken pot pie pan and cut a small slit in the center of the pie. 
  6. Brush a small amount of oat milk on top of the pie and place in the oven for 25 minutes or until the pastry top is golden. 
  7. Let the vegan chicken pot pie cool on a rack for about 10 minutes, then slice and serve.

This vegan chicken pot pie recipe uses oyster mushrooms instead of chicken for a savory and shredded meat-like texture that’s healthier and vegan. While it’s okay to indulge in fake meats sometimes, it’s important to take into consideration their ingredients for health and sustainability reasons.

While there are some healthier plant-based meat alternatives on the market, there are even more fake meats that are made with unhealthy additives which can complicate the decision-making process when it comes to finding a fake meat option. Many people that are turning to these vegetarian imitation meats are doing so in the name of health, but unfortunately, many of these products have no nutritional benefit and may even be bad for you.

Many of these fake meats like the Impossible Burger are made from processed soy, pea, or potato and other ingredients are added to enhance flavor and color to make the products more meat-like. In fact, many of these fake meats contain more salt than the animal products they are based on.

Additionally, because many of these vegetarian or vegan meat products are new on the market, there have not been enough studies to give us a better understanding of the true effects of them on our health. Instead of regularly incorporating these imitation meat products, which can surely be tasty, interesting, and unique, try to limit your consumption of them or let them only be a treat on a special occasion.

You can instead use ingredients such as large mushrooms (like portobello, oyster, chanterelle, and porcini), legumes, tempeh, tofu, and jackfruit as a healthier alternative that can satisfy the need for the central food in your meal.
