Here’s everything you need to make your buns. This recipe yields 12 buns.

Dough ingredients:

  • 3¾ cups all-purpose flour
  • Quarter-ounce packet of instant yeast
  • 1 tsp. salt
  • ¾ tsp. ground cardamom
  • ½ cup warm water
  • ½ cup warm plant-based milk
  • ¼ cup olive oil (or substitute avocado oil)
  • ¼ cup maple syrup (or substitute agave)

Filling ingredients:

  • ½ cup vegan butter substitute, softened
  • ½ cup brown sugar (or substitute coconut sugar)
  • 2 tsp. ground cardamom
  • 1 tbsp. cinnamon

Topping ingredients:

  • 1 tbsp. plant-based milk
  • 1 tbsp. maple syrup
  • ⅓ cup chopped almonds

How to Make the Buns

Follow these steps to prepare your Swedish cardamom buns.

  1. In a large mixing bowl, combine 2 cups of flour as well as yeast, salt, and cardamom. Pour in warm water, warm milk, oil, and maple syrup. Mix until smooth.
  2. Stir in the remaining flour a little at a time until the dough is soft.
  3. Knead the dough until it is elastic and smooth in the bowl. This should take no more than five minutes. Cover with a clean cloth and set aside for ten minutes.
  4. To prepare the filling, combine the softened butter, sugar, cardamom, and cinnamon until fully blended. Set aside.
  5. Transfer the dough onto a lightly floured surface. Roll the dough into a large, thin rectangle. Spread the filling evenly over the dough.
  6. Starting from the bottom of the shorter edge of the rectangle, fold the dough over three times (like you would a sheet of A4 paper into a letter). Gently pinch the sides to seal.
  7. With the long edge facing you, cut the dough into one-inch strips with a pizza cutter or sharp knife. You should end up with twelve strips.
  8. Carefully take a strip and twist it a few times. With one end of the twisted strip held down on the counter, gently wrap the other end in a circle, tucking it under to make a rough knot.
  9. Place the bun on a baking sheet lined with parchment paper. Repeat with the other strips, making sure to place them two to three inches apart so they will not touch when they rise.
  10. In a small bowl, combine the milk and maple syrup for the topping. Brush the buns with half the mixture. Sprinkle over with the chopped almonds.
  11. Cover the baking sheet with a clean cloth. Let the buns rise for 20 to 30 minutes in a warm spot.

  13. Once the buns have risen, place them in the oven. Bake at 350° Fahrenheit for 20 to 25 minutes, or until golden brown in color.
  14. Brush the warm buns with the remaining half milk and maple syrup mixture and serve. Enjoy your Swedish Cardamom buns!
