1. Vegan Jelly Donuts
Yield: 10 donuts
Ingredients:
- 2 tsp. dry yeast
- 3 tbsp. sugar
- 2/3 cup warm plant-based milk
- 1/2 tsp. salt
- 2 cups plain flour
- 2 tbsp. vegetable oil
- 4 1/4 cups cooking oil for frying
- 10 tbsp. strawberry jelly
- 1 tbsp. powdered sugar
Instructions:
- Mix dried yeast and sugar in warm milk and leave to bubble for 10 minutes.
- Put the salt and flour in a mixing bowl and make a hole in the middle of it.
- After the yeast has bubbled for 10 minutes, put it and two tablespoons of oil in the hole. Stir until it makes a smooth, sticky dough.
- Cover the mixing bowl with a kitchen towel and put it in a warm place for 45 minutes.
- Now you need to knock back the dough (to remove the bubbles). Do this by putting the dough on a floured work surface, using floured hands. Now knead it using your fists until it is smooth, soft, and stretchy and the bubbles have all been removed. Then let it rest again for half an hour.
- Repeat step five and let the dough rest again for another half hour.
- Now the dough is ready. Separate it into ten portions of the same size and roll them into balls. Put them on a lightly floured board, cover them with a kitchen towel, and put them in a warm place for around an hour. They will double in size.
- Heat a deep frying pan with oil (to around 320°F) then lower to medium heat. Gently put the dough balls in the oil and fry for around four minutes, until golden brown on both sides, turning in between. Carefully take out the donuts using a slotted spoon and place them on two pieces of paper towel alternative to remove excess oil. Allow to cool.
- Next, take a chopstick and make a hole in the side of every doughnut, big enough to put the jelly inside. Use a piping bag with a long nozzle and put one tablespoon of strawberry jelly in each donut.
- Use a fine-mesh sieve to sprinkle with icing sugar and serve.
2. Vegan Ring Donuts
Yield: 12 donuts
Ingredients:
- 1/4 cup vegan margarine
- 2 tbsp. sunflower oil
- 1/2 cup plant-based milk
- 1/2 cup sugar
- 2 cups plain flour
- 1/2 tsp. salt
- 1 tsp. baking powder
- 4 1/4 cups cooking oil for frying
Preparation:
- Slowly melt vegan margarine on low heat. Add two tablespoons of oil and milk, then stir. Remove from heat.
- Mix half the sugar, as well as flour, salt, and baking powder together.
- Make a hole in the middle of the flour mixture and pour in the melted butter. Mix slowly until it makes a dough.
- Roll the dough into balls using floured hands and press a hole in the center of each ball using your thumb, then form the ball into a ring shape.
- Heat the extra oil on medium heat and fry each doughnut for about five minutes, until golden brown on both sides, turning in between.
- Place on two sheets of paper towel alternative to absorb excess oil.
- Coat each donut in the rest of the sugar by rolling both sides in it and serve.
If you prefer something brighter, after step 6 you can instead glaze your ring donuts in icing to add a little color and sprinkle with any toppings of your choice, such as vegan chocolate chips, or grated vegan cheese.
3. Mini Vegan Donuts
Yield: 24 mini donuts
Ingredients:
- 1/4 cup vegan margarine
- 6 cups sunflower oil
- 1/2 cup plant-based milk
- 1/3 cup sugar + 1/3 cup sugar to coat
- 1/2 tsp. salt
- 1 cup + 1 tbsp. plain flour
- 1 1/2 tsp. baking powder
Instructions:
- Melt the vegan margarine on medium heat and mix in two tablespoons of the oil and the milk.
- Mix 1/3 cup of sugar, with salt, flour, and baking powder in a mixing bowl, then make a hole in the middle. Pour the melted margarine mixture into the hole.
- Slowly stir until it forms a dough and separate the dough into 24 small balls.
- Heat the rest of the oil in a deep pan until it’s very hot. Then reduce the heat to medium and fry the donuts together, a few at a time, until they are golden brown and float to the top of the oil. Remove from the heat with a slotted spoon and put on two sheets of paper towel alternative to drain the excess oil.
- When the donuts are cool, roll them in the remaining sugar and serve.
