Chile Verde Ingredients
- 2 – 14 oz. cans diced mild green chiles (you can also use spicier varieties if you like spice)
- 1 – 15 oz. canned pinto beans, drained and rinsed
- 1 – 15 oz. can salsa verde
- 1.5 cups vegetable broth
- 1/2 lb red potatoes, quartered
- 1 jalapeño, diced (optional for heat)
- 1 medium white onion, diced
- 3 garlic cloves, minced
- 1 tsp. cumin
- 1 tsp. oregano
- Juice of half a lime
- Salt and black pepper to taste
Optional ingredients (for garnish):
- Cilantro, chopped
- Green onion, thinly sliced
- Jalapeño, sliced
- Avocado, sliced
- Lime wedges
- Tortilla chips, to break over the top for crunch
- Non-dairy sour cream

Crockpot Chile Verde Recipe
- Add all ingredients except the lime juice to a 6-quart crockpot and stir to combine.
- Place the lid on the crockpot and cook for at least 8 hours on low or 4-5 hours on high. The potatoes should be tender and soft when finished.
- Set the temperature to warm and add lime juice, stirring well.
- Serve with preferred toppings and enjoy!
