How to Make Chocolate Zucchini Bread at Home

- Large bowls
- Whisk

Ingredients
- 1 cup flour
- 1 tsp baking soda
- ¼ tsp salt
- ½ cup Fairtrade cocoa powder
- 2 eggs or vegan egg substitutes
- ½ cup organic cane sugar
- ½ cup butter, melted or vegan butter substitute
- 1 tsp vanilla extract
- 1 zucchini, grated
- 1 cup chocolate chips or chopped homemade vegan chocolate
Method
- Grease and flour the loaf pan and set aside.
- In a large bowl, whisk together flour, baking soda, salt, and cocoa powder.
- In a second bowl, whisk eggs, sugar, melted butter, and vanilla together until well combined.
- Stir in dry/flour mixture until just combined, then fold in zucchini and chocolate chips.
- Pour into a loaf pan, and add optional chocolate chips on top of the bread.
- Bake in the oven for 50 minutes at 350F.
- Remove and let cool. Serve immediately or store up to 4 days at room temperature, up to 7 days in the refrigerator, or up to 3 months in the freezer.
