This quick and delicious vegan caesar salad recipe is just as zesty, flavorful and creamy as a traditional caesar salad dressing. Learn how to make it yourself.
Caesar salad isn’t vegan. This has less to do with the toppings of the salad (which include parmesan cheese and chicken or bacon bits), and more to do with the creamy caesar salad dressing. Traditional caesar salad dressing has a number of non-vegan ingredients. The base ingredients are olive oil, lemon juice, dijon mustard and garlic, however caesar salad dressing also uses ingredients such as anchovies, egg yolks, Worcestershire sauce and finely grated parmesan – all of which are definitely not vegan-friendly.
Thankfully, you can still make your own caesar salad using all plant-based ingredients. Follow this recipe for a quick and delicious vegan caesar salad recipe that is still packed full of zesty, garlicky, and creamy goodness.
Vegan Caesar Salad Recipe
Caesar Dressing Ingredients:
- ¼ cup plain hummus (store-bought or homemade)
- 1½ tbsp dijon mustard
- 1 tsp lemon zest
- 3-4 tbsp lemon juice
- 3 tsp capers minced
- 3 tsp caper brine (the liquid in the caper jar)
- 4 garlic cloves minced
- Generous pinch of sea salt and ground black pepper
- 1-2 tbsp extra virgin olive oil
Instructions:
- Combine the hummus, dijon mustard, lemon zest, juice, capers, caper brine, garlic, salt and pepper and olive oil in a mixing bowl.
- Whisk all the ingredients together until desired creaminess is achieved. Add a splash of hot water to thin out the dressing if it is too thick, or not pourable.
- Taste and adjust flavors to your liking. If the dressing is too salty, you can add 1 tbsp of maple syrup or agave to balance this out.
- Use your vegan caesar salad dressing recipe straight away or store in an airtight container in the fridge for up to a week.
Crouton Ingredients:
- 3 cups torn crusty bread (with crusts left on)
- 3 tbsp olive oil
- Generous pinch of sea salt
Instructions:
- Heat a large non-stick frying-pan over a medium heat.
- In a large mixing bowl, massage your bread chunks with the olive oil and salt until all pieces are coated.
- Once the frying-pan is hot, add your croutons. Fry until the bread chunks turn crispy and deep golden in colour. Stirring every two to three minutes to ensure all sides are fried and to avoid burning.
Vegan Caesar Salad Toppings
Caesar salad consists of a base of crisp romain lettuce, crunchy croutons, creamy dressing and finally parmesan shavings to serve on top. Some people also add bacon bits or chicken slices for added protein, texture and saltiness.
To make and assemble your delicious vegan caesar salad, you will need:
- 1 head romaine salad hearts, separated
- Croutons
- ½ cup vegan parmesan
- ½ cup vegan bacon substitute
Instructions:
- Place your romaine salad hearts evenly across a large serving dish.
- Sprinkle over your homemade croutons and vegan bacon substitute.
- Drizzle your creamy homemade vegan caesar salad dressing over the whole salad and top with vegan parmesan cheese. Enjoy!
