Homemade vegan tortillas are easy to make in your own kitchen using organic ingredients and avoiding preservatives.

Homemade vegan tortillas make a great base for filling with vegan ground beef and taco toppings or even as a side to dip in a hearty soup on a fall day. Don’t be turned off from making your own by the perfect circle of store-bought tortillas. Instead, delight in the imperfection of form and go for the homemade fresh taste.

If you thought all tortillas were vegan, you may be interested to know that some tortillas are made with lard or butter. If you buy them at the store, read the fine print or look for the “vegan” designation. But to avoid the preservatives and other ingredients to extend their shelf-life, you can make your vegan tortillas with a few simple steps. Make sure to buy organic ingredients whenever possible.

Yield: approximately 10 6-inch tortillas

Ingredients:

  • 2¾  cups organic all-purpose flour
  • ¾ tsp organic baking powder
  • ¾ tsp salt
  • ¼ cup organic vegetable oil
  • ¾ cup warm water

Instructions:

  1. In a large mixing bowl, mix the dry ingredients.
  2. Add the water and oil and mix with a wooden spoon until the dough starts to come together. Tip: get your hands doughy and massage the dough til it comes together. Add a little more flour if the dough is sticky.
  3. On a lightly floured surface, divide the dough into 12 balls, cover it with a towel and let rest for 15-20 minutes.
  4. Heat a large pan over medium heat.
  5. Roll dough into circles. Use flour to keep it from sticking and experiment with thickness and size, depending on your pan and heat.
  6. Place the vegan tortilla in a hot pan and let cook for about a minute until you see bubbles starting to form and the dough turns light brown. Then flip and cook for up to 30 seconds more, til light brown on the other side.

Top with beans, rice, salsa, and a vegan cheese topping. For variety, spread with homemade hummus and add sprouts, tomatoes, and cucumbers for a refreshing variation. Or check out seasonal and local produce and come up with your own mix of toppings.

Vegan tortillas are best eaten fresh but can be stored for a few days in a plastic bag and reheated in the microwave or in a warm oven.
