When it comes to making baked potatoes, choosing the right potato goes a long way. You can use any potato, but russet potatoes are the best as their skin allows them to crisp up, while their starchy interior keeps the potato fluffy inside. 

Baked potatoes are typically made by wrapping a potato in aluminum foil, however that isn’t a necessary step. If you do choose to wrap your spud in foil, remember that aluminum foil is recyclable if the right steps are taken.

When it comes to baking the perfect baked potato, there’s good news, because it couldn’t be easier! Follow this step-by-step recipe on how to make a delicious vegan baked potato.

Ingredients:

  • 1 Russet potato 
  • 1 tbsp avocado oil (can substitute for olive oil or any other vegetable oil of your choosing)
  • Generous pinch of kosher salt
  • Generous pinch of freshly-ground black pepper

Vegan Baked Potato Instructions:

  1. Poke your potato all over with a fork, and place on a wire oven rack. It’s a good idea to have a baking tray below to catch any liquid that may come out. 
  2. Bake your potato in the oven at 450F for 25 minutes, or until the skin has turned dry and slightly wrinkly.
  3. Carefully remove the potato from the oven, and brush all over with the oil. Sprinkle over a generous amount of kosher sea salt. Place the potato back onto the baking tray, this time the opposite side up, to let the potato cook evenly. 
  4. Bake the potato again, for another 20 minutes. To check the potato is done, very carefully squeeze the potato using an oven mitt. If the potato is soft and squishy, it is done. Return the potato to the oven in 5-minute increments if it is not quite done and keep checking until it becomes soft to the touch. 
  5. When your baked potato is ready, remove it from the oven. Carefully cut the potato lengthwise with a sharp knife, and give it a good squeeze. Now grab a fork and fluff up the inside of the potato, ready for your favorite seasonings and toppings!
