Yields: 6 puddings 

Cake Ingredients:

  • 1 cup organic pitted dates 
  • 1 cup homemade oat milk (can use any plant-based milk of your choice)
  • ⅓ cup water
  • 1 tsp baking soda 
  • ½ cup vegan butter 
  • ½ cup fair-trade brown sugar 
  • 1¼ cups self-raising flour (can sub for gluten-free self-raising flour if needed).

Toffee Sauce Ingredients:

Instructions:

  1. Preheat the oven to 375 degrees Fahrenheit. Grease six silicone pudding molds. 
  2. In a large saucepan over medium heat, add the dates, milk, and water. Simmer until the dates become very soft. Remove from the heat and mix in the baking soda. Set aside to cool. 
  3. In a large mixing bowl, beat together the sugar and butter until creamy with an electric or hand-held whisk. Slowly beat in the date mixture until well combined. Gently fold in the flour, one tablespoon at a time, until everything is fully combined. Scoop the mixture evenly into the pudding molds.
  4. Bake for 20 to 25 minutes. A skewer should come out clean. 
  5. For the sauce, add the golden syrup, sugar, and butter in a saucepan over medium-to-low heat. Simmer the sauce mixture until the butter has melted and the sugar has dissolved. Mix well. 
  6. Poke holes into the puddings and pour over three-quarters of the sauce. Leave the puddings in the molds to cool for ten minutes. 
  7. Turn the vegan sticky toffee puddings out onto a plate and serve by drizzling over the extra sauce and a scoop of organic vanilla ice cream.
