  1. Rinse the onions, paying attention to the top of the green stalks.
  2. Dry them by gently patting with a kitchen towel, or, if it’s a warm day, leave them to air dry.
  3. Chop off the roots and the leafy ends. You can also use the green stalks, as they hold plenty of flavor.
  4. Thinly slice, according to preference.
  5. Place your sliced onions in an air-tight container or reusable freezer bag.
  6. Place them in the freezer.

Your onions will be ready to use straight from the freezer, but if you prefer, you can thaw them in a bowl of cold water, or place overnight in the refrigerator.
