Wild Garlic Pizza: Easy Vegan Recipe

Spring has sprung, which means it’s wild garlic season. What better way to celebrate this short but special time of year than with wild garlic pizza? Here’s how to make it.

Widespread across eastern Canada and the eastern US, wild garlic grows in shady and damp conditions from late winter to the end of spring. It leaves an unmistakable fresh, garlicky smell across its usual habitat, woodlands and forests.

If you’re doing the foraging yourself, remember: a few poisonous plants can be mistaken for wild garlic. To avoid mistakes, crush a leaf in your hand; you can identify wild garlic with its strong garlicky smell. Wild garlic leaves are long, vibrant and green with smooth pointy edges. Clusters of delicate white wild garlic flowers bloom towards the end of the season in mid-spring; however, you can’t harvest blooming garlic — for this purpose, anyway.

Wild Garlic Pizza Recipe

Wild garlic pizza is deliciously fresh and aromatic. No matter which pizza toppings you choose, be sure to add the wild garlic leaves after you’ve removed your pizza from the oven.

Ingredients:

Instructions:

  1. Prepare the baking tray by sprinkling a light coating of polenta on top.
  2. Heat 1 tsp olive oil in a large skillet, then add the peppers. Season and cook until soft (around 10-15 minutes). Add the mushrooms in the last few minutes.
  3. Roll out the dough, place on the baking tray, and cover with tomato sauce.
  4. Add the greens, peppers and mushrooms, and sprinkle over the Italian pizza seasoning and vegan parmesan cheese.
  5. Bake at 450°F until the crust is golden and the toppings have crisped. Remove from the oven and finish with a drizzle of olive oil and a handful of wild garlic leaves.
