With the colder weather, longer nights, and festive season almost upon us, settling in for the evening with family and friends with a bunch of comfort food is an inevitable and wonderful part of the fall and winter seasons. These vegan pumpkin spice Oreos are definitely going to be a hit with anyone who tries them.
Pumpkin Spice Oreos Recipe
This vegan pumpkin spice Oreo recipe actually has two parts to it: the recipe for the cookie dough and of course, the mouthwatering pumpkin spice filling. With that in mind, it is going to take a little longer to prepare, but your efforts will be well rewarded. Make your homemade pumpkin spice ahead of time, as you’ll need it for both parts.
Cookie Ingredients:
- ½ cup cacao powder (not cocoa powder, which is more bitter in taste)
- ¼ cup + 2 tbsp. brown rice flour
- ¼ cup + 1 tbsp. maple syrup
- ½ tsp. pumpkin spice
Pumpkin Spice Filling Ingredients:
- 15 oz. can full-fat coconut milk
- ¼ cup pumpkin puree
- ½ tsp. pumpkin spice
- 1 tbsp. maple syrup
Instructions:
- Start with the filling so it has time to thicken. Combine the coconut milk, pumpkin purée, pumpkin spice, and maple syrup in a bowl and mix well to get a smooth, creamy consistency. Once done, refrigerate the mix so it can thicken. This will make it that much easier when you put on your cookies.
- Preheat your oven to 350°F.
- Mix the cookie ingredients together in a large bowl until you get a nice thick (but not sticky) dough.
- You should be able to roll 8 to 10 balls using the dough and place these on your baking tray. Flatten the balls out to your desired thickness, gently using your hands or the base of a cup to do so.
- Bake the cookies for 10 minutes at 350°F. Just check on them once or twice to ensure they are not burning or not baked all the way through.
- Once done, let the cookies cool down completely on a cooling rack.
- When the cookies are ready, spread your pumpkin spice filling on one cookie, then take another, gently ‘sandwich’ them together so as to not squish out all that delicious filling and make a mess of it.
- If you can resist an immediate taste test, refrigerate or freeze your pumpkin spice Oreos for around 30 minutes, which will help the filling solidify.
- Store them in the refrigerator and try not to eat them all in one sitting!
