Cornbread has long been considered a staple of southern cooking, and recipes have been adapted and changed over time. Many people have their own rules about what constitutes proper cornbread, though most can agree that the ideal cornbread is crispy on the outside, and moist on the inside. Using this recipe, you can learn how to make homemade southern cornbread to serve alongside homemade tempeh, a lentil-walnut vegan roast, a hearty bowl of vegan chili, or just on its own. 

Making Homemade Southern Cornbread

This vegan recipe for homemade southern cornbread serves between 8 and 10 people, and will take approximately 45 minutes to prepare and bake. 

Ingredients

  • 1½ cups vegan buttermilk (oat milk + 2 tbsp apple cider vinegar
  • 1½ cups stone-ground cornmeal
  • ¾ cup flour 
  • 1 generous tbsp baking powder 
  • ½ tsp sea salt 
  • ¼ cup melted vegan butter + 1 tbsp for baking
  • ¼ cup extra virgin olive oil 
  • ¼ cup organic brown sugar 
  • ¼ cup organic maple syrup 

Instructions

  1. In a large bowl, whisk together the cornmeal, flour, baking powder, and salt to remove large clumps.
  2. Create a well in the middle of the mixture and pour in the melted vegan butter, oil, brown sugar, maple syrup, and vegan buttermilk. 
  3. Whisk the ingredients gently to combine until smooth. Don’t worry if there are lumps, this is normal and you don’t want to overmix. 
  4. Leave the mixture to rest for about 15 minutes. During this time, place a 9×9 inch metal baking dish into the oven and heat the oven to 400F. 
  5. Once the oven is at temperature, remove the dish and add 1 tbsp vegan butter to the hot dish. Let the butter melt, and sprinkle lightly with additional cornmeal. 
  6. Slowly pour the cornbread batter into the dish and place it back in the oven for 25 to 30 minutes, or until the top is golden brown, and an inserted toothpick comes out clean. 
  7. Remove your homemade southern cornbread from the oven and allow it to cool for about 15 minutes before serving. 

Tip: You can store this cornbread at room temperature in an airtight container for up to 3 days, or you can freeze it for up to 2 months.
