Makes approximately 2 cups

  • ¾ cup raw cashews
  • ¼ cup water
  • ¼ cup pickle juice (straight from jar)
  • 1 tbsp lemon juice
  • 1 tbsp ketchup or 1 tsp tomato paste
  • ½ tbsp hot sauce (as hot as you like)
  • 1 clove garlic, crushed
  • 1 tsp mustard, creole mustard if possible
  • ¼ cup green onions, sliced
  • ¼ cup dill pickle, chopped
  • 1 tbsp chives
  • ½ tsp smoked paprika
  • handful parsley, chopped
  • salt to taste

  1. Soak the cashews in water overnight and drain.
  2. Place all ingredients except the parsley and salt in a blender and blend on high for 30 seconds.
  3. Scrape down the sides with a spatula and continue this process until the vegan remoulade is creamy.
  4. Transfer to a bowl and mix in the parsley by hand. Taste and add salt if necessary.

If you don’t have raw cashews, you can also make this recipe using vegan premade mayonnaise. To do this, replace the cashews and water with vegan mayonnaise and instead of the pickle water, add another ¼ cup of chopped pickle.

Store your vegan remoulade in an airtight container in the fridge for up to a week.
