Ingredients:
- 1 stick (½ cup) vegan butter, softened
- ½ tsp. pure vanilla extract
- 3 cups organic or DIY powdered sugar
- Optional: Full-fat coconut milk
Instructions:
- Add softened butter to a mixing bowl or stand mixer.
- Cream using an electric hand mixer or stand mixer until light and fluffy, approximately one minute.
- Add the vanilla, and mix to combine.
- Mix in the powdered sugar ½ cup at a time, scraping down the sides as necessary.
- If your dairy-free frosting is too thick, add one tablespoon of coconut milk at a time until you reach your desired consistency.
Store immediately in the fridge for up to one week, or in the freezer for up to one month.
