Hash is generally the term used to describe a dish made up of meat, potatoes, and onions. It was invented as a way to use up leftovers by repurposing them. That concept is still a great one, especially for those who want to reduce their food waste, but don’t like eating the same thing two days in a row. Let’s take a look at how to easily throw a vegan hash together. 

Simple Vegan Hash Recipe

To make a colorful and healthy vegan hash, you’ll need the following ingredients

  • 3 medium-sized potatoes, diced
  • 2 cloves garlic, minced 
  • 1 medium onion, sliced   
  • 1 bell pepper, chopped 
  • 1 cup mushrooms, sliced 
  • ½ tsp cumin
  • ½ tsp smoked paprika 
  • ¼ tsp chili powder 
  • salt & pepper, to taste
  • 3 tbsp olive oil, for frying

Instructions:

  1. Heat olive oil on medium heat in a large pan, and add in the diced potatoes. Stir to coat, and then let sit for 10 minutes to get crispy. 
  2. Add the garlic in and cook for an additional minute before adding the rest of the ingredients into the pan. 
  3. Cook for another 5 to 10 minutes, or until vegetables are softened, then remove from heat. 
  4. Finish your vegan hash off with freshly chopped herbs, directly from your kitchen herb garden. 

Substitutes and Variations

Potatoes and onions are the star of any hash, but don’t miss the opportunity to sneak in plenty of other vegetables, or add in different ones if that’s what you have on hand. Try subbing sweet potatoes for regular potatoes, or swap different types of cabbage in for bell peppers. 

Other great additions include: 

  • chopped zucchini
  • sliced cherry tomatoes
  • grated carrots 
  • black beans
  • diced pumpkin or butternut squash 

You can truly make this dish your own using whatever vegetables and spices you have on hand. To elevate this vegan hash even further, try adding vegan feta cheese or vegan parmesan on top.
