Simple Fruity Overnight Chia Pudding Recipe

Overnight chia pudding is a simple, hassle-free and tasty way to incorporate chia puddings into your diet. Follow this recipe and start enjoying chia seeds every day. 

Ingredients:

  • 1 ½ cups organic coconut milk
  • 1 cup organic plain Greek yogurt (sub with plant-based yogurt for a vegan alternative)
  • 1 tsp vanilla extract 
  • 2 tbsp maple syrup, agave, or another natural sweetener of your choice
  • Pinch of salt
  • ½ cup chia seeds
  • ½ cup chopped fruit of your choosing (find out which fruits contain protein to make a choice that will keep you energized for longer)

Instructions:

  1. Gather your coconut milk, yogurt, vanilla extract, maple syrup and salt and place them in a large bowl. Whisk together all the ingredients until fully incorporated. Stir in the chia seeds. Let the mixture sit for seven to ten minutes. 
  2. Now grab your chopped fruit and stir them in gently, making sure to avoid lumps. 
  3. Grab four airtight containers. Fill your containers with your chia pudding mixture. Refrigerate overnight.
  4. The next day, take your chia pudding and top with your favorite toppings. We recommend coconut flakes, dried fruit and nuts. The chia pudding will keep in the fridge, sealed, for up to five days. 
  5. Enjoy!
