Overnight Oats: Three Simple Breakfast Ideas

Overnight oats recipes offer a simple and delicious alternative to traditional oatmeal. They are healthy, easy to prepare and you can experiment with different ingredients to get a different flavor every morning.

If you’re running short on time in the mornings but still want to have a healthy breakfast to kickstart your day, then try the overnight oats recipes below. We give you three vegan options for overnight oats that you can change up however you like; the only non-negotiable ingredient is oats.

1. Peanut Butter and Banana Overnight Oats

Ingredients

  • 1 banana
  • 1/2 cup oat milk
  • 1/4 cup water
  • 2 tsp. peanut butter
  • 1 tsp. unsweetened cocoa powder
  • 1 – 2 tsp. whole cane sugar
  • 6 tbsp. rolled oats
  • 1-2 tsp. chopped peanuts
  • 1 tsp. chopped chocolate or cacao nibs

Preparation

  1. Mix half of the banana, the oat milk, water, peanut butter, cocoa powder and sugar in a blender until creamy. Alternatively, you can mix the cocoa powder with the liquid ingredients and mash the banana with a fork, then mix everything by hand.
  2. Pour the mix into a bowl, then stir in the oats.
  3. Let everything sit in the fridge overnight.
  4. In the morning, cut up the rest of the banana and add it to the overnight oats.
  5. Finally add peanuts, chocolate, or cacao nibs and enjoy!

2. Healthy Overnight Oats Recipe With Apple and Cinnamon

Ingredients

  • 7 tbsp. rolled oats
  • 2 tsp. ground linseed
  • cinnamon
  • 2/3 cups oat milk
  • 2 dates
  • 1/2 apple
  • 1 tbsp. apple sauce (optional)
  • 2-3 tbsp. (vegan) yogurt
  • 2 tsp. sunflower seeds or 2 walnuts

Preparation

  1. Mix oats, linseed, and cinnamon. Then add the oat milk and stir well.
  2. Cut the dates and apple into small chunks and add to the oat mixture.
  3. Let everything soak in the fridge overnight.
  4. In the morning, add applesauce and yogurt to your overnight oats. You can also add more oat milk if the consistency is too dense.
  5. Lastly, sprinkle with some sunflower seeds or nuts.

3. Blueberry Oats Recipe With Hemp Seeds

Ingredients

  • 1/4 cup oat milk
  • 1/2 cup water
  • 7 tbsp. rolled oats
  • 1-2 tsp. maple syrup
  • 2 tbsp. (vegan) yogurt
  • 1 handful blueberries (frozen or fresh)
  • 2-3 tsp. hemp seeds
  • 1 tsp. unsweetened cocoa powder

Preparation

  1. Mix together the oat milk, water, and oats. Then stir in some maple syrup.
  2. Top with two tablespoons of yogurt.
  3. If you use frozen blueberries, take them out of the freezer and put them in a separate bowl to thaw.
  4. Let everything sit in the fridge overnight.
  5. The next morning, add blueberries and hemp seeds to your overnight oats and sprinkle with cocoa powder.

For any of these recipes, you can experiment with dairy or non-dairy products of your choosing – your overnight oats will turn out rich and creamy whatever you use. Also, make sure to try out different fruits, as well as different kinds of nuts and seeds. That way you won’t grow tired of overnight oats and can create a healthy breakfast routine.
