Sauerkraut is made by a picking process called lacto-fermentation. Cabbage naturally contains lactic acid bacteria, or lactobacilli, and needs only salt to start the fermentation process. During fermentation, the lactobacilli proliferate exponentially, and it is exactly this bacteria that is responsible for the health benefits of sauerkraut. Sauerkraut juice is the concentrated essence of all that probiotic goodness and is often used to relieve mild constipation.

  • Beta-Carotene: A precursor to vitamin A, beta-carotene supports the immune system and is important for healthy skin, eyes, and bones. 
  • Vitamin B12: Sauerkraut is one of the very few plant-based sources of vitamin B12, which is necessary for a healthy nervous system. This makes the juice especially helpful in maintaining a balanced vegan diet

Lactic acid bacteria may not only promote intestinal health in the long term but also stimulate digestion in the short term. That’s why sauerkraut juice is recommended as a gentle and natural laxative for acute and chronic constipation. For the best effects, drink the juice in the morning, directly after getting out of bed. During therapeutic fasting cures, one or two glasses of sauerkraut juice are recommended. 

Warning: Sauerkraut juice is a gentle laxative that can be consumed daily, but if you ingest too much, it can cause diarrhea. If you want to drink sauerkraut juice regularly, be sure not to drink more than one or two glasses a day.
