Serves 4

Ingredients:

    Equipment:

    • Measuring spoons and scales
    • Medium mixing bowl
    • Wooden spoon
    • Whisk
    • 4 mini cocottes or ramekin dishes (Available on Amazon**)
    • Sieve

    Instructions:

    1. While you don’t need to preheat the oven every time, this vegan lava cake recipe requires you to heat your oven to 390°F.
    2. Grease each dish and dust with cocoa powder, then place two squares of vegan chocolate in the middle of each dish.
    3. In your medium bowl, mix flour, cocoa powder, sugar, baking powder and salt.
    4. Pour in the milk and whisk well. The resulting mixture should be very thin.
    5. Divide the mixture between the dishes.
    6. Bake for about 13 minutes or until your vegan lava cakes have puffed up and look set. If you move them, they should jiggle slightly and still look like they are liquid inside.
    7. Serve immediately with fresh strawberries, homemade vegan ice cream or vegan cool whip.
