This jicama salad is healthy, full of flavor, and has an exciting crunch. Jicama is a tuber vegetable that’s believed to have originated from Mexico and has now spread to other parts of the world in tropical and subtropical regions. Jicama is bulbous, with thick brown skin, and is creamy and white on the inside. It’s similar in flavor and texture to apples and potatoes, but not as sweet as apples and lower in carbs than potatoes. It’s well-loved for its crisp, earthy, and slightly-sweet flavor. 

This salad is perfect as a side dish to vegan black bean burgers, mac and cheese, tacos, and more. It can also be made ahead of time to bring on a hike or to work.

Crunchy Jicama Salad Ingredients

Here’s what you’ll need to make this jicama salad:

  • 2 cups jicama, peeled and sliced and cut into thin slices about 1 1/2 inches long
  • 2 cups red cabbage, thinly shredded 
  • 1 cup carrots, shredded 
  • 1/2 cup red onion, thinly sliced 
  • 1/2 cup cilantro, chopped 
  • 1/2 cup cucumber, thinly sliced
  • 1/4 cup lime juice
  • 2 tbsp apple cider vinegar 
  • 2 tbsp avocado oil
  • 1/4 tsp salt

Once you've prepared your ingredients, just add them all together to a large bowl, mix well, and adjust the dressing depending on your flavor preferences.

  1. In a large bowl, add all ingredients and mix together until well combined.
  2. Sample the salad and adjust salt, lime juice, oil, and vinegar if preferred. 

This jicama salad will stay fresh for up to three days when stored in an airtight container in the fridge.
