While avocados are delicious and packed with nutrients, there are several reasons to try not an overdo it with your avocado consumption. Avocados are very expensive as well as high in calories. Depending on the time of year, you might have a hard time finding good quality, soft and ripe avocados for less than two dollars each. This may be due to where the avocados are grown as well. To meet the US demand for avocados, many are imported from Mexico or countries in Central and South America. These long transportation routes contribute to high CO2 emissions. Here are some substitutes to swap in if you want to skip avocado.
1. Butternut Squash
Butternut squash is a great avocado substitute that works for both sweet and savory foods. It can be cut into cubes and thrown into a salad, or mashed onto a slice of bread. Drizzle some honey for a tasty, sweet slice of toast, or add pesto and vegetables for a hearty sandwich. You can even use butternut squash in homemade veggie sushi rolls. 2. Tofu
