Eggless french toast is sweet, crispy, and easy to put together — a quick breakfast or snack for the whole family to enjoy. Choose the topping of your choice and dig in.

French toast is usually made from a batter consisting of milk, eggs, sugar, and other select ingredients, but it is really simple to make vegan eggless french toast by using plant-based milk and cornstarch as a thickener to replace the eggs. You will still get the same delightful result — crispy and browned on the outside and creamy and fluffy in the center.

The best kind of bread to use for this eggless french toast recipe is something a little thick and dry, such as french bread, sourdough, or ciabatta, cut into thick slices. Any non-sweetened plant-based milk will work, such as coconut, almond, cashew, or soy milk. We fry the eggless french toast in vegan butter in this recipe, but you could choose to fry it in any cooking oil of your choice.

Yield: 8 slices of french toast

Ingredients:

  • 1 tsp. vanilla essence
  • 1 cup unsweetened plant-based milk
  • 2 tsp. maple syrup, plus extra for serving
  • 1/4 cup cornstarch
  • 1 tsp. ground cinnamon
  • 1 tsp. ground flaxseeds
  • 1/2 tsp. baking powder
  • 2-3 tbsp. vegan butter
  • 6-8 slices of thick-sliced quality bread, such as ciabatta or french
  • 2 tbsp. Fair Trade powdered sugar

Instructions:

  1. Whisk the vanilla, plant-based milk, maple syrup, cornstarch, cinnamon, ground flaxseeds, and baking powder in a large mixing bowl to make a batter.
  2. Melt the vegan butter in a medium-sized frying pan, over medium heat. Give the batter a final whisk to distribute the cornstarch, which will start to sink.
  3. Take a slice of bread and soak it in the batter for ten seconds, then fry each side for about three minutes, until they turn golden brown, use tongs to remove the bread and place it on a plate. Repeat with each slice of bread, adding more vegan butter as needed to prevent sticking.
  4. Serve immediately by, drizzling maple syrup over each slice and sprinkling with powdered sugar.

Alternative Toppings:

  1. Fresh, seasonal, locally grown fruit such as blueberries (seasonal from spring through fall) and sliced strawberries (seasonal in the spring and summer) or Fair Trade sliced bananas. If you have bought your ingredients already but aren’t making the eggless french toast on the same day, try washing the strawberries with vinegar to keep them fresh longer.   2. A dollop of vegan cream or nice cream.
  3. For something less sweet spread a layer of vegan homemade peanut butter on each slice of french toast.
  4. Another savory option is to add some vegan cheese when the french toast has finished cooking and allow it to melt.
  5. Chocolate lovers can drizzle some vegan chocolate sauce or homemade vegan Nutella on their french toast.
  6. A sprinkling of desiccated coconut provides a less sweet, low-calorie option.
  7. Another healthier option is to add some sliced avocado to the top of each slice (available seasonally from spring through fall).
