German Bread Spice Mixes: 2 Simple Recipes

With the right bread spices, you can prepare traditional kinds of aromatic German bread. We’ll show you two variations that you can easily make in your own kitchen.

Make Your Own Bread Spices: Basic Recipe

Many ready-made bread spice mixes have a high salt content and contain various flavor enhancers. By making your own bread seasoning, you are choosing the healthier (and more delicious) option. You can use this basic, four-ingredient recipe to flavor a tasty rye or spelt loaf. You’ll need:

  • 2 tbsp. caraway seeds
  • 2 tbsp. anise
  • 2 tbsp. fennel
  • 2 tbsp. coriander

You’ll also need the following materials:

  • Coffee grinder or mortar and pestle
  • Resealable jar 

Preparing the Mixture:

  1. Put the ingredients in a coffee grinder and grind the spices.
    OR place the ingredients in the mortar and grind them together with the pestle.
  2. Store the bread spice mixture in a resealable, sterilized jar.

Tip: Use one to two tablespoons of bread spice per two cups of flour for perfectly aromatic loaves.

Onion Bread Seasoning

Spicy onion bread makes for a nice change from regular bread. This bread tastes especially good with cream cheese, soup, or a DIY vegan spread

For the onion bread spices, you’ll need the following ingredients:

  • 4 tsp. dry, roasted onions
  • 2 tsp. coriander
  • 2 tsp. allspice
  • 2 tsp. caraway seeds

You’ll need these kitchen gadgets:

  • Coffee grinder or mortar and pestle
  • Resealable jar 

Preparing the Bread Seasoning :

  1. Grind the onions, coriander, allspice, and caraway seeds in a coffee grinder or the mortar and pestle. Depending on your preference, you can grind your bread spice mixture finely or coarsely.
  2. Store the finished mixture in a clean, resealable jar.
