Traditionally, broccoli pesto recipes include grated parmesan, but ours is completely vegan and dairy-free. To replicate the effects of the cheese, we are using a pinch of extra salt and soaked cashews. You could go all-out and make an easy vegan parmesan cheese if you have an extra few minutes.

The United States is the world’s largest producer of broccoli and most of the produce harvested is sold fresh. Finding home-grown, organic produce is always the healthiest option for you and the environment, so check out your local farmers’ market for ingredients.

Broccoli contains a significant amount of Vitamin C, essential minerals, dietary fiber, and protein. It is also low-fat and filled with anti-cancer, antioxidant, and heart health benefits. Your broccoli pesto recipe is a treat for your senses and a boost for the rest of your body.

  • 2 tablespoons of extra virgin olive oil
  • 1/4 cup of water
  • A pinch of salt and pepper

  1. Steam the broccoli florets for 4-5 minutes until tender. Rinse and drain.
  2. Add the steamed broccoli florets and garlic, basil, salt, pepper, and cashews into your food processor and pulse until ingredients are well blended.
  3. Scrape the sides of your food processor and pour in the olive oil, lemon juice, and water. Pulse again and purée until smooth. Add more olive oil or water if necessary to achieve your preferred consistency.

Transfer to a bowl and serve as a dip, spread, or sauce.
