Traditionally, broccoli pesto recipes include grated parmesan, but ours is completely vegan and dairy-free. To replicate the effects of the cheese, we are using a pinch of extra salt and soaked cashews. You could go all-out and make an easy vegan parmesan cheese if you have an extra few minutes.

How To Make Your Vegan Broccoli Pesto

Ingredients:

  • 2 cups of broccoli florets
  • 1 tablespoon of lemon juice
  • 2 cloves of garlic (crushed)
  • 2/3 cup of packed basil leaves
  • 1/3 cup of cashews (soaked in boiling water for 20 minutes)
  • 2 tablespoons of extra virgin olive oil
  • 1/4 cup of water
  • A pinch of salt and pepper

Method:

  1. Steam the broccoli florets for 4-5 minutes until tender. Rinse and drain.
  2. Add the steamed broccoli florets and garlic, basil, salt, pepper, and cashews into your food processor and pulse until ingredients are well blended.
  3. Scrape the sides of your food processor and pour in the olive oil, lemon juice, and water. Pulse again and purée until smooth. Add more olive oil or water if necessary to achieve your preferred consistency.

Transfer to a bowl and serve as a dip, spread, or sauce.
