The best kind of bread to use for this eggless french toast recipe is something a little thick and dry, such as french bread, sourdough, or ciabatta, cut into thick slices. Any non-sweetened plant-based milk will work, such as coconut, almond, cashew, or soy milk. We fry the eggless french toast in vegan butter in this recipe, but you could choose to fry it in any cooking oil of your choice.

Eggless French Toast Recipe
Yield: 8 slices of french toast
Ingredients:
- 1 tsp. vanilla essence
- 1 cup unsweetened plant-based milk
- 2 tsp. maple syrup, plus extra for serving
- 1/4 cup cornstarch
- 1 tsp. ground cinnamon
- 1 tsp. ground flaxseeds
- 1/2 tsp. baking powder
- 2-3 tbsp. vegan butter
- 6-8 slices of thick-sliced quality bread, such as ciabatta or french
- 2 tbsp. Fair Trade powdered sugar
Instructions:
- Whisk the vanilla, plant-based milk, maple syrup, cornstarch, cinnamon, ground flaxseeds, and baking powder in a large mixing bowl to make a batter.
- Melt the vegan butter in a medium-sized frying pan, over medium heat. Give the batter a final whisk to distribute the cornstarch, which will start to sink.
- Take a slice of bread and soak it in the batter for ten seconds, then fry each side for about three minutes, until they turn golden brown, use tongs to remove the bread and place it on a plate. Repeat with each slice of bread, adding more vegan butter as needed to prevent sticking.
- Serve immediately by, drizzling maple syrup over each slice and sprinkling with powdered sugar.
Alternative Toppings:
- Fresh, seasonal, locally grown fruit such as blueberries (seasonal from spring through fall) and sliced strawberries (seasonal in the spring and summer) or Fair Trade sliced bananas.
