It may be possible to find tofu skin in your local Asian store, but using our tofu skin recipe will give you a fresher product, plus the process of removing the skins from the pot carefully is fun and satisfying.
Tofu skin (or yuba) is made when soy milk is simmered and then the skin is carefully removed and dried, this process is repeated until the pan is almost empty. Tofu skin can be added to stir fry, salads, stews, or even used to make egg rolls — they absorb the flavors of the dish and take on their own unique taste.
Tofu Skins Recipe
Yield: 20 pieces
Ingredients:
- 2 cups soybeans
- 6 cups water
Instructions:
- Soak the soybeans for around four hours, until they can be easily broken down. Strain the water.
- Pulse in a blender with 6 cups water, until smooth. Strain through a cheesecloth or cheesecloth alternative to separate the soy milk from the pulp (okara). Don’t throw away the okara, it can be used again.
- Pour the soy milk into a pot and bring to boil on a high heat. Then reduce the heat and simmer for around five minutes, until a skin forms on the surface. Do not stir the milk.
- Use a wooden skewer to separate the tofu skin from the edge of the pot, starting with the thickest edge.
- Place on a cooling rack to cool or dry under the sun for crispier skin.
- Repeat steps four and five until no more skin forms.
- Use immediately or refrigerate for up to two days.
Using Tofu Skins
Tofu skins can be used in a variety of ways, and some might surprise you. Consider using your beancurd skins in the following ways:
