Yield: 6 slices

Ingredients:

  • 1 sheet of vegan puff pastry
  • 1 tbsp. olive oil
  • 6 tbsp vegan crème fraîche (optional)
  • 2 cups cherry tomatoes
  • 2 tsp. salt
  • 1 tsp. ground pepper

Instructions:

  1. Roll out puff pastry and cut it into six equal rectangles.
  2. Coat with olive oil.
  3. Optionally coat with vegan crème fraîche.
  4. Cut cherry tomatoes into slices and place on top.
  5. Season with salt and pepper.
  6. Bake at 400 F degrees for around 20 minutes.

Yield: 18 puffs

Ingredients:

  • 1 cup raw cashews
  • ½ cup soy milk (or any other plant-based milk)
  • 1½ tbsp. lemon juice
  • 2 garlic gloves
  • 1 tsp. salt
  • 2 cups fresh spinach, packed 
  • 1 small onion, chopped
  • 2 tbsp. chopped dill
  • 1 sheet vegan puff pastry
  • 1 tbsp. olive oil

Instructions:

  1. Let cashews soak for half an hour. 
  2. Blend cashews, milk, lemon juice, garlic, and salt in a food processor until smooth.
  3. Wash and drain spinach, then add to blender and mix along with onion and dill.
  4. Cut the vegan puff pastry into three equal strips. Cut strips into thirds, resulting in 18 squares.
  5. Spoon 2 tbsp. spinach mixture on each pastry square.
  6. Fold the corners of squares and pinch to the center. Brush with olive oil.
  7. Bake at 400F for around 25 minutes, or until golden brown.

This french tart is the perfect mix of soft and crunchy, and quite unique in its taste and texture. Follow the simple steps below for a classic quiche recipe, but know that several variations are possible such as an asparagus quiche

Yield: 8 servings

Ingredients:

  • 1 tbsp. flaxseeds
  • 2¼ tbsp. water
  • 2 cups almond flour
  • ½ tsp. salt
  • 2 tbsp. olive oil
  • 2-4 tbsp. water
  • 1 tbsp. olive oil
  • 2 minced garlic gloves
  • 1 cup chopped mushrooms
  • 1 cup baby spinach
  • 14-ounce block of firm tofu
  • 2 tbsp. non-dairy milk
  • 2 tbsp. nutritional yeast
  • ⅓ cup sun-dried tomatoes or cherry tomatoes
  • seasoning (onion powder, turmeric, salt) 

Instructions:

  1. Grease a large or multiple small quiche pans. Alternatively, use muffin tins.
  2. Mix flaxseeds and water in a bowl and set aside as a vegan egg substitute.
  3. Mix all dry ingredients in a food processor. Drizzle olive oil, flax egg, and water in.
  4. Add dough to the pan of muffin tins and press evenly on the bottom. Poke holes in the crust and bake for 10 minutes at 375F.
  5. For the filling, sauté garlic and mushrooms on medium heat for 2-3 minutes until soft. Add spinach and stir until wilted. Set aside.
  6. Add tofu, non-dairy milk, nutritional yeast, and spices to a food processor and combine until smooth.
  7. Take the crust out of the oven and pour the filling in. Spread evenly and add tomato pieces to the quiche. Bake for thirty more minutes.
  8. Let the quiche cool down for at least 10 minutes before slicing and serving this vegan party food.
