- 2 minced garlic gloves
- 1 cup chopped mushrooms
- 1 cup baby spinach
- 14-ounce block of firm tofu
- 2 tbsp. non-dairy milk
- 2 tbsp. nutritional yeast
- ⅓ cup sun-dried tomatoes or cherry tomatoes
- seasoning (onion powder, turmeric, salt)
Instructions:
- Grease a large or multiple small quiche pans. Alternatively, use muffin tins.
- Mix flaxseeds and water in a bowl and set aside as a vegan egg substitute.
- Mix all dry ingredients in a food processor. Drizzle olive oil, flax egg, and water in.
- Add dough to the pan of muffin tins and press evenly on the bottom. Poke holes in the crust and bake for 10 minutes at 375F.
- For the filling, sauté garlic and mushrooms on medium heat for 2-3 minutes until soft. Add spinach and stir until wilted. Set aside.
- Add tofu, non-dairy milk, nutritional yeast, and spices to a food processor and combine until smooth.
- Take the crust out of the oven and pour the filling in. Spread evenly and add tomato pieces to the quiche. Bake for thirty more minutes.
